Our chef, Jean-Luc Moreau, maintains personal relationships with these farmers, often collaborating on what to grow seasonally to best complement our menu.
However, some flavors are simply non-negotiable and intrinsically French. For these, we import directly from a network of trusted 'petits producteurs' (small producers) across France. Our 'Beurre d'Isigny AOP' comes from Normandy, a cultured butter with a distinctive hazelnut note that transforms our pastries and sauces. Our lentils are the 'Lentilles Vertes du Puy AOP', grown in the volcanic soil of Auvergne, which gives them a unique, peppery flavor and firm texture. Our chickens for the Coq au Vin are sourced from Bresse, and our olive oil comes from a small grove in Nyons.
